What makes the restaurant is its cosy and welcoming ambience. The wholesome cookery, is made with local products sourced from the mountains of Pistoia.
The menu is always seasonal and is interpreted with local products carefully and knowledgeably selected by the managers.
All the pasta is home made, the meats are chosen for the best local breeders, and the cheeses are amongst some of the most flavoursome and rarest, such as Pecorino made from unpasteurised sheep milk from the mountains of Pistoia.
The menu is highly influenced by local farming, chestnuts, barley and barley flour. Some of the specialities worth a mention are cutlets of wild boar with wine and chestnuts.
- Maccheroni pasta with chestnuts and sausage, Pistoian mountain soup with barley.
- Stewed rabbit with Tuscan olives and fried polenta.
- Tagliata, rare cuts of beef flavoured with juniper.
- Chestnut soufflé, apple and chestnut tart, home-made ice cream are just some of the desserts on offer.
The choice of wines from the cellar is also rich and varied and favours local producers.
